The heating kills most of the bacteria while cooling prevents the multiplication of whatever might have survived. Pasteurized fluids are stored in air tight containers. The technique was developed by the French scientist Louis Pasteur. Milk is pasteurizes by being heated to 71.7°C for at least 15 seconds. Pasteurized milk can be kept in the fridge for 4 to 5 days.
